Cape Assist Fundraiser
To Feature Southern Cook
WILDWOOD — Cape Assist’s annual fundraising dinner, to be held on April 6 at 5:30 p.m. at the Rio Station Restaurant in Rio Grande, promises to be a unique culinary event. Featuring celebrated chef James Burton, the dinner will be prepared in the family-style tradition of southern hospitality.
Burton is the third generation of southern cooks. He began his career at age 12 under the tutelage of his grandmother, Helen Dickerson, who started working in the kitchen of The Chalfonte Hotel in Cape May in 1920 and went on to become the head chef. Her recipes for Southern Fried Chicken and Buttermilk Biscuits have been sought after by Bon Appétite magazine and Phil Donahue.
She has also cooked for Ronald Reagan. Helen died in 1990 but her daughter Dot Burton continues her Southern recipes at The Chalfonte. Dot is best known for her crab cakes and barbecue. Dot Burton’s son, James, has established his own reputation for comfort food, southern style.
Since graduating form Johnson Wales University, he has honed his culinary skills at The Chalfonte, Godmothers, Rio Station, and the Lobster Loft. He is currently the chef at the Cape May Fish Market on the Mall. Chef James Burton will be returning to Rio Station for the Cape Assist Fundraising Dinner, and the menu for the evening will reflect his heritage in southern-style cooking.
