Catherine’s Butter Crisp Apple Pie

With the holidays fast approaching I thought it would be a good time to mix things up with something fun. Although this recipe calls for a little more work than most, nothing tastes better than an apple pie made from scratch.
The buttery, flaky crust just melts in your mouth as the crispy brown sugar topping collides with tender cinnamon apples. The ingredients in this recipe make enough for two pies, since one is never enough. Enjoy!
Crust:
• 4 cups all-purpose flour
• 1 3/4 cups shortening
• 4 tablespoons white sugar
• 1 egg
•1/2 cup water
• 2 1/2 teaspoons salt
1. In a large mixing bowl, combine all-purpose flour, shortening, sugar, and salt. Blend together until crumbly.
2. In a small bowl, mix egg with water. Blend into flour mixture. Refrigerate until ready to use.
Topping:
• 2 cups brown sugar
• 1 1/4 cup old-fashioned oats
• 1 1/4 cup all-purpose flour
• 2 teaspoon ground cinnamon
• 1 cup cold butter
1. Mix brown sugar, oats, flour, and 1 teaspoon cinnamon in a separate bowl. Use a pastry cutter or 2 forks to mash cold butter into the oats mixture until the mixture resembles coarse crumbs.
Filling:
• 1 cup unsalted butter
• 6 tablespoons all-purpose flour
• 1/2 cup water
• 1 cup white sugar
• 1 cup packed brown sugar
• 8 apples — peeled, cored, and sliced
1. Preheat oven to 425 degrees F. Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
2. Place the bottom crust in your pan. Fill with apples, mounded slightly. Sprinkle Topping over apples. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
3. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F. Continue baking for 35 to 45 minutes, until apples are soft.
